Freshly roasted coffee requires a period of time to exchange CO2, a technical term called "degassing". The purpose of this process is to create a better coffee flavor, with a thicker "body". Normally, the degassing process will take place over 24 hours, but for the best, it needs to be 7 days.

Freshly roasted coffee, if taken to drink immediately, the taste will not reach the ripeness as expected. Therefore, if you want to enjoy good coffee, you should use coffee that has been roasted for more than 24 hours. At the same time, it is not recommended to leave the coffee for too long because the flavor will decrease over time. The peak flavor of coffee falls around 7-14 days.
